Toasted Coconut Chocolate Chunk Cookies

Oh my god, it’s still so hot. My dog and I were sitting around the apartment melting today. I was reluctant to turn the oven on, but I persevered. Mostly because of all the nice comments I’ve been getting. Thanks, and keep them coming. It’s nice to know that someone out there is reading. Even if you are all related to me.

So, I made some cookies for our little Masters party coming up on Sunday. I had a chance to thumb through my April issue of Cooking Light and came across a recipe for Toasted Coconut Chocolate Chunk Cookies. What doesn’t sound good about that? I had all the ingredients on hand, so I whipped up a batch. This is like cookie 101 – easy, easy. Follow the directions, and you’ll be set. I did chill my cookies prior to putting them in the oven. I find that chilling the dough makes the cookie less flat when they come out of the oven. I can’t vouch for the end product, but the dough was great. I can’t imagine they won’t be delicious!

  1. No daughter of mine would be able to resist those baked cookies. That dough must have been really good!

  2. The dough was really good! I had one yesterday. The cookie lived up to its dough!
