Grilled Flank Steak with Creamed Horseradish

It’s feeling more like winter here (actually it’s raining today, but they are predicting snow next week), and thus, some of my dinners have been more hearty, comfort food lately.  Sometimes you just need meat and potatoes. Period.

I found a recipe for grilled flank steak in cookbook I have called “Seriously Simple“. Here it is:

Grilled Flank Steak with Creamed Horseradish

Marinade:

1 large shallot, minced

2 garlic cloves, minced

3 tablespoons soy sauce

3 tablespoons olive oil

1 tablespoon finely chopped fresh thyme (or 1 tsp dried thyme)

1/4 teaspoon seasoning salt

pepper to taste

You also need a 2lb flank steak

Creamed Horseradish:

1/4 cup sour cream

2 teaspoons prepared horseradish

salt and pepper to taste

1 tablespoon finely chopped fresh chives

1. Make the marinade – Combine all of the marinade ingredients and stir to combine. Put the steak in a large zip lock and then pour in the marinade. Marinate the meat for several hours. I made the marinade in the morning and let the steak hang out in it all day.

2. Make the horseradish sauce – Combine all of the ingredients and stir to combine. This can be done well in advance.

3. Grill the steak over medium-high heat for 5-7 minutes per side (this will produce a medium-rare steak).

4. Let the steak rest and then slice the meat on a diagonal and arrange it on a nice serving platter with the sauce.

Serve this meal with new potatoes and a green vegetable of your choice!

The only downside….I had to cook this indoors using a grill pan. Unfortunately, my apartment now smells like Benihana. I hate that. So, if you have access to an outdoor grill, I highly recommend using it instead. Have a great day!
